Vegan Chocolate Chip Cookies!

Autumn has already arrived and what's the perfect way to enter this season than a sweet recipe to get us through the rainy and cold weather. Vegan chocolate chip cookies recipe is here to keep us cozy! I've found this recipe from (youtuber) Kalyn Nicholson's website - www.kalynnicholson.com and loved it! Make sure to try it out.


INGREDIENTS

  • 1/2 Cup of Stevia

  • 1/2 Cup of Brown Sugar

  • 1 Cup of Vegan Butter (Becel has a great vegan one)

  • 1/4 Cup of Vanilla Almond Milk (or opt for your fav)

  • 1 TSP of Pure Vanilla Extract

  • 1 TSP of Baking Soda

  • 2 Heaping Cups of Flour

  • Pinch of salt

  • A champagne shower of vegan chocolate chips

  • Small Spoonful of Peanut Butter (optional, I just like to keep things interesting)

STEPS

  • Preheat oven to 350°F

  • Mix softened (not melted) butter into a large mixing bowl with 1/2 cup of stevia and 1/2 a cup of brown sugar. Optional: add a spoonful of softened peanut butter.

  • Add 1/4 cup of vanilla almond milk along with 1 tsp of vanilla extract and mix until fully combined.

  • Add in remaining ingredients of flour, baking soda and pinch of salt. Continue mixing until dough forms and all dry ingredients are completely mixed in.

  • Add in a waterfall of vegan chocolate chips. Combine with cookie dough. Taste test a spoonful of dough because life is short and cookie dough is a pleasure.

  • Roll small balls and place 3-4 inches apart. Cookies are best baked on parchment paper and on middle rack of oven.

  • Bake for 9-12 minutes. If you like extra chewy, bake for only 9 minutes. If you want a bit of crisp, bake until a golden 12 minutes.

  • Let cool.

  • Transfer from baking sheet to plate. Now would be the best time to taste test a warm cookie.
